Picnic recipes

Spring is here and the weather is getting warmer. Flowers are blooming an everybody is smiling. What better to do on a lazy afternoon than going for a picnic? Right, nothing ! Here are a few cute picnic recipes to spice up your day!

Salmon wraps

You will need:

  • smoked salmon 
  • wraps
  • herb butter
  • lettuce 

Preparation:

Smear the herb butter on the wrap, make an even spread. Then put the salmon on top the herb butter along with some lettuce. Roll the wrap and cut it into small pieces.  Voilà, your salmon wraps are ready!

Blueberry muffins

You will need: 

  • blueberries
  • milk
  • butter
  • an egg
  • baking powder
  • sugar
  • self-raising flour

Homemade pink lemonade

You will need:

  • 8 lemons
  • 200g caster sugar
  • 140g raspberries
  • ice (to serve)

Preparation:

Pare the zest from the lemons with a peeler, removing as little white pith as possible – cut away any pith you can from the strips. Juice the lemons and mix the juice, zest, sugar and raspberries with 1.2 litres of boiling water. Let cool, then sieve, pressing through juice with the back of a spoon. Add sugar to taste and chill in jugs. To serve, add a few lemon slices, raspberries and lots of ice.

Cold pasta salad

You will need: 

  • tri-color pasta
  • vegetables (of your choice)
  • salt, pepper, garlic
  • olive oil
  • grated parmesan cheese

Preparation:

Cook the pasta and rinse it with cool water. Drain well. Add (frozen) vegetables, onion, vinegar, olive oil and seasonings, mix well. Keep it in the fridge overnight. Before serving top it off with some cheese.
